If you love onions, you’ll love this French Onion Soup from Brain Body Diet. Here’s why you should be indulging in more onions. 1 tablespoon grapeseed oil

3 large yellow or white onions, quartered and thinly sliced

6 cups vegetable broth, or 4 cups water plus 2 cups chicken bone broth

2 cups greens (kale, chard, or spinach), thinly sliced

1 bay leaf

1⁄2 cup fresh thyme, chopped

Sea salt to taste

1 teaspoon fresh ground pepper

1⁄2 cup grated vegan cashew nut cheese or nutritional yeast flakes 1⁄4 cup green onions, chopped (for garnish)

 

Instructions

  1. Heat the grapeseed oil in a large pot and cook the onions until they are soft and browned.
  2. Add the broth, greens, and bay leaf. Season with thyme, salt, and pepper. Simmer over a low flame for 1 hour.
  3. Garnish with cashew nut cheese or nutritional yeast flakes and green onions.
