Sassy Slaw: Full of Color, Flavor and Nutrients

This spectacular slaw, from my book Brain Body Diet, is full of flavor, crunch, and nutrients. I recommend you eat at least five colors of whole foods each day to help your detoxification genes, prevent micronutrient deficiency and get your fill of antioxidants. This salad definitely does it! With prebiotic jicama, brain-protecting kohlrabi and fiber-rich apples, this coleslaw alternative is so bold and so delicious!

Serves 2 to 4

1 tablespoon grated ginger
3 tablespoons fresh lime juice
1 teaspoon coconut aminos
1⁄4 teaspoon cracked black pepper, or to taste
Dash of sea salt
3 tablespoons grapeseed or MCT oil
2 1⁄2 cups beets, peeled and julienned
1 large Granny Smith apple, julienned
1 small jicama, julienned
1 small kohlrabi, julienned
1 tablespoon sunflower seeds

Instructions:

1. Combine the ginger, lime juice, coconut aminos, black pepper, and salt in a small mixing bowl. Whisk in the oil and set aside.

2. In a large bowl, combine the beets, apple, jicama, and kohlrabi. Toss in the prepared dressing and refrigerate until ready to serve. Toss with sunflower seeds and serve.
